Pandan’s comforting fragrance comes from 2-acetyl-1-pyrroline, the same aroma compound closely associated with fragrant jasmine and basmati rice. Thai cooks commonly knot or bruise the leaves before adding them to rice, coconut milk and desserts, helping release their sweet, grassy aroma. Pandan is also pressed for its natural green colour and wrapped around foods such as gai hor bai toey, or pandan-wrapped chicken.
