Meet the Ingredient

Ylang ylang, known in Thailand as kradang nga (pronounced kra-dang ng-ah), is recognised by its long, curling petals and beautifully rich fragrance. The flowers deepen from green to yellow as they mature, releasing an especially noticeable aroma during the evening and at night. Cananga odorata grows naturally in parts of Thailand and has long held a place in Thai fragrance, food and herbal traditions.

Ylang ylang flower oil is naturally rich in protective aromatic compounds and has powerful antioxidant, antibacterial and anti-inflammatory properties. In traditional Thai dessert-making, mature ylang ylang flowers were briefly passed over a candle flame to release more of their natural fragrance. The flowers were then floated in water overnight, and the delicately scented water was used to prepare coconut milk or syrup for Thai sweets.
